Who doesn't love a fantastic brunch? Who doesn't love drinking some bubbly late morning? I think we can all agree how special a brunch is with your loved ones, and with this pairing it will be even more memorable.
Let me introduce you to my Ricotta Poached Eggs with Spiced Olive Oil
Ingredients (Serves 4)
16 ounces Ricotta Cheese
8 eggs
1 teaspoon salt
1 tablespoon white vinegar
1/4 cup extra virgin olive oil
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon dried coriander
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
Your favorite bread toasted for dipping
Direction-
Pre-heat oven 375'
In large sauce pan, fill with water and bring to a boil
In large bowl add ricotta cheese and salt, whisk until smooth. Add the whipped ricotta into individual oven safe ramekins. Bake for 10 minutes
While cheese is baking, your water should be boiling. Reduce heat to medium, you want the water to be softly boiling so you don't break the yolk. I like to poach my eggs 2 at a time. Add a splash of vinegar to the boiling water. Carefully add 1 egg at a time and cook until the white is set. 3-5 minutes, depending on how you like your egg. Using a slotted spoon, remove from water and add to a plate with paper towel to remove excess liquid. Repeat until all the eggs are cooked.
In small bowl add olive oil and the rest of the spices. Whisk until your olive oil turns red and the spices are almost dissolved in the oil.
Remove your warm ricotta cheese. Top with poached eggs, drizzle with your spiced olive oil and serve with crostini or toast.
