At this time all we can think about is staying healthy. I want to share an easy immune boosting meal that has so much flavor you will feel like you went out to eat. Salmon color is called astaxanthin and helps your immune cells function properly. Pistachios, almonds and walnuts are needed by the immune system to fight off invading bacteria and helps prevent colds. Red peppers have more vitamin c than oranges which helps in antibodies and white blood cells which help fight infection. These being some of my favorite immune boosting ingredients I decided to put them together in one POWERFUL dish.
Pistachio Crusted Salmon over Red Peppers
Serving 4 Preparation time 15 minutes Cook time 15 minutes Total 30 minutes
Ingredients-
4 salmon filets
2 T extra virgin olive oil
2 T coconut amino (soy sauce will also work)
Juice of 1 lemon
1/2 cup crushed pistachio
1/2 cup panko
2 red peppers sliced
Salt and pepper for taste
Directions
Preheat oven to 400 degrees F
To make the pistachio crust, combine pistachios and panko in the bowl of a food processor until mixture resembles coarse crumbs; season with salt and pepper, to taste.
Dredge each salmon filet with pistachio mixture.
In large oven-proof skillet heat extra virgin olive oil over medium high heat.
Add salmon to the skillet and sear both sides until golden brown, about 1-2 minutes per side flipping carefull .
Place into oven and bake for 10 minutes.
Remove from oven and place salmon on plate to rest.
In skillet add red peppers and coconut amino, toss until slightly cooked and coated.
Serve peppers and topped with pistachio crusted salmon filet .
Don't forget about the wine! You want a medium bodied red with balanced acidity and low tannins. A northern cool weather Pinot Noir or New World Bordeaux
