When I first tasted HammerSky's Bourbon Barrel Aged Sauvignon I couldn't believe how the bourbon barrel notes came through. I have had bourbon barrel aged wine, but it's always been just a hint of the bourbon in the back. This wine you can taste the bourbon and it is so unique, with BIG flavors of the spirit. I needed to pair a dish that also has BIG flavors otherwise the food would get lost in the wine and that is something you don't want to do when pairing. You want a balance, the food to compliment the wine and the wine to compliment the food.
Ingredients (serves 4)
4 boneless chicken thighs, cut into chunks
4 wooden or metal skewers
2 Japanese eggplant, sliced into discs
1 cup of your favorite teriyaki sauce
1 red bell pepper, chopped
4 sprigs of rosemary
Directions
Take your chicken thighs and cut into pieces, add to a bowl with rosemary and teriyaki sauce. Massage and let sit in the refrigerator for at least an hour
While the chicken is marinating, slice the eggplant and add to a bowl. Heavily salt the eggplant and let sit for 20 minutes to remove the liquid
If you are using wooden skewers, make sure to soak in water for 20 minutes before grilling
Wash the eggplant and pat dry.
Preheat your grill to 375-400'
Now it is time to assemble. Take your skewer, add red bell pepper, eggplant, chicken and repeat until skewer is filled.
Now we are ready to grill, spray with non stick grill spray and add skewers. Grill for 7 minuts, flip and grill the other side for another 6-7 minutes.
Serve with a side of rice and of course that Bourbon Barrel Aged Cabernet Sauvignon from HammerSky!
