Super Bowl Food

Need some fun ideas for your super bowl party? Easy recipes that will excite your guests. When I am hosting I always think of the journey your palate is going to take. Flavors, textures and drinks. Hoping you enjoy this years Super Bowl Sunday! Or any other excuse to have a party!

Scotch Eggs


Serving 4

Prep time 20 minutes

Cook time 15 minutes

Total time 35 minutes


Ingredients

6 large eggs

1 cup all-purpose flour

1 cup panko bread crumbs

7 ounces (¾ cup) fresh breakfast sausage, casings removed (if necessary)

Vegetable oil (for frying)

Kosher salt, freshly ground pepper


Directions

Add 4 eggs to small saucepan, add cold water to cover eggs, bring to a boil and remove from heat, remove eggs after 2-3 minutes

Rinse eggs in cold water to cool.

Gently crack shells and peel, add peeled eggs to bowl of cold water (you can do this ahead of time, up to 1 day)

In large bowl add flour, another large bowl add panko bread crumbs.

Divide sausage in 4 equal parts, pat them flat into a patty, lay 1 soft boil egg onto the sausage patty and wrap with the sausage making sure it is sealed completely. Do the same with all eggs.

Take remaining 2 eggs and whisk with a little water

Carefully take the sausage coated eggs and dip in flour, then egg wash, then panko (this can also be done up to a day ahead, keep in refrigerator.)

In saucepan, fill oil about 2" deep, making sure it will coat the egg. Heat oil medium heat (350') and add eggs in. Cook 5-6 minutes, remove eggs to a cooling rack so access oil drips off.

Season when hot with salt and pepper.

Serve with my caramelized onion dip (next recipe) or traditionally mustard.

Caramelized Onion Dip


Serving 6-8

Prep time 10 minutes

Cook time 30 minutes

Total time 40 minutes


Ingredients

3-4 medium sized yellow onions sliced

1 tbsp olive oil

1 tsp granulated sugar

1/2 tsp garlic powder

1 tsp truffle salt (can use kosher salt)

8 ounces whipping cream

4 ounces beef stock ( can use vegetable stock)


Directions

In large sauce pan heat pan medium low heat, add olive oil and yellow onions stirring occasionally

After 5 minutes of simmering, add sugar, salt and garlic, stir

If onions are browning, turn heat to low. Saute for 20 minutes until onions are caramelized.

In blender add whipping cream

Pulse to thicken cream around 30 seconds, DO NOT MAKE WHIP CREAM

Add onions and stock to the cream.

Mix until smooth and incorporated. If too thick add more stock.

Use as dip for Scotch Eggs, potato chips, crostini or crudite

Sage Tapenade Salami Cotto Canapes


Serving 8

Prep time 15 minutes

Total time 20 minutes


Ingredients

3 cloves garlic, peeled

1 c pitted kalamata olives

2 tbsp capers

1 tbsp chopped sage

3 tbsp chopped fresh parsley

2 tbsp lemon juice

2 tbsp olive oil

2 slices whole grain bread, de-crusted, cut into 4 even slices, toasted

4 slices Salami Cotto ( cut slices in half)


Directions

Place the garlic cloves into a food processor and pulse to mince.

Add the olives, capers, parsley, lemon juice, and olive oil.

Blend until texture you want

Take toasted bread and spread tapenade on toast

Top with Salami Cotto and pretty leaf of sage (optional)

Pulled Pork Tostadas


Serving 8

Prep time 10 minutes

Cook time 3 hours 30 minutes

Total time 3 hours and 40 minutes


Pork Ingredients

4 lb. boneless pork shoulder 3 tbsp. packed brown sugar 1 tbsp. kosher salt 1 tbsp. smoked paprika 1 tsp. garlic powder 1 tsp. onion powder 1 tsp. ground cumin 2 tbsp. Olive oil 1 beer, I used Firestone Walker Lager

8 tostada

Lime, avocado, cotija cheese for garnish


Sauce Ingredients

8 oz tomato sauce 3 tbsp tomato paste 2 tbsp lime juice 3 tbsp brown sugar 1/4 tsp chili powder 1/2 of a chopped yellow onion 1 clove garlic chopped 1 tsp worcestershire sauce

Pork Direction

Preheat oven 250'

Take pork shoulder and coat with brown sugar, salt, paprika, garlic powder, onion powder and cumin.

Heat large pot to medium high, add olive oil amd add pork, brown on all sides.

Remove pot from heat, add lager and place pot in oven.

Cook for 3 hour 20 minutes until for tender.


Sauce directions

In medium saucepan add little oil to coat bottom, saute onions for 3-4 minutes until browned.

Add tomato paste, stir until onions are coated 1 minute

Add remaining ingredients.

Stir and cover, let cook 20 minutes


Drain liquid and shred with 2 forks.

Add your chili sauce and stir until pork is coated.

Place on corn tostada, top with avocado, cotija cheese and wedge of lime.


What to pair

There is spice, multiple flavors, different ingredients and array of dishes I would suggest a nice lager or tequila margaritas. Both won't compete with flavors, a little citrus to cut through some spice and fat, refreshing and delicious!
