During this time I have stocked up on tons of frozen vegetables, fruits, meats and being creative in the kitchen coming up with new recipes. I wanted to share this recipe because there is a lot of substitutes and I think this is want we need at this time. This is an awesome salad idea from things you have in your home. So I took my frozen broccoli and peas to make this easy and delicious recipe. You can get creative and take any vegetables and use this dressing recipe and bring those boring bags of veg to life!
Ingredients
3 T Tahini (or any nut butter you have)
3 T Sesame oil (if you don't have sesame use olive oil)
1 T coconut aminos (liquid aminos or soy will work)
1 T crushed nuts (pistachios, sesame, almonds...) Save some to top the salad
3T almond milk (whatever milk you have)
6 T mayonnaise
salt to taste
Directions
Put all the ingredients in large bowl and whisk vigorously. Taste and add salt if needed.
Take your frozen vegetables and steam in microwave, then remove any access water.
Toss vegetables in large bowl and dress with salad dressing.
Let salad cook in refrigerator before serving.
Crush any nuts you have laying around and top with the crushed nuts. I had some dried figs and tossed that in the salad too. Dried cranberries would be great too.

I always pair with the seasoning, dressings, sauces so for this dish lets think about the dressing. Soy and sesame are the stars so don't pair anything with a nutty profile or an umami flavor. I would go with a rich red wine or a fruity IPA with this salad. Let me know what you think!
